Try this easy recipe this weekend for the whole family to enjoy ....

Ingredients (Servings: 4)
  • 2 tablespoons vegetable oil, plus more for frying (about 4 cups)
  • 1/2 small onion, chopped
  • 1 small Yukon Gold potato, peeled, chopped
  • 1 small carrot, peeled, chopped
  • 1 small poblano chile, chopped
  • 2 garlic cloves, thinly sliced
  • Kosher salt
  • 1/3 cup chili powder
  • 2 punds ground beef chuch
  • 2 cups fresh salsa
  • 8 corn tortillas
  • Shredded iceberg lettuce, chopped tomatoes, grated sharp cheddar cheese, cilantro, and lime wedges (for serving)
Preparation

Heat 2 Tbsp. oil in a large pot over medium-high and cook onion, potato, carrot, chile, and garlic, stirring occasionally, until onion is golden and soft, 8-10 minutes. Season with salt, add chili powder, and cook, stirring, until chili is fragrant, about 1 minute. Add ground beef and cook, breaking up with the back of a spoon and scraping up any browned bits from pot, until meat is browned, 12-15 minutes. Stir in salsa; bring to a boil. Reduce heat and simmer until most of liquid evaporates and beef is tender, 15-20 minutes. Season beef picadillo with salt.

Meanwhile, pour oil into a medium heavy pot to come 3'' up the sides; fit with thermometer. Heat over high until thermometer registers 375C. Holding a tortilla perpendicular to the oil near the edge of the pot, carefully lower into the oil so that the tortilla slides to the bottom (this method will fry and seal both sides of the tortilla, allowing steam to inflate-or ''puff''-the tortilla like a balloon). After a few seconds, the puffy tortilla will float to the surface; turn over and push the top edge of a metal spatula (a fish spatula works best) into to center of the tortilla, bending it into a taco shape, and press it below the oil's surface. Hold in place and cook until golden brown and crisp, about 1 minute. Invert taco shell on paper towels to drain. Repeat with remaining tortillas.
Spoon beef picadillo into shells and top with lettuce, tomatoes, cheese, and cilantro. Serve with lime wedges.

Do Ahead: Beef picadillo can be made 1 day ahead. Let cool; cover and chill. Reheat before serving.

  • 1 cup lukewarm water
  • 1/8 cup sugar
  • 1 tablespoon (3 tsp) active dry yeast
  • 3/4 tsp salt
  • 1 1/4 tablespoon oil
  • 2 cups flour (roughly)

Ingredients
  • Torta del Casar cheese, in box (if can't be found try similar French or Portuguese cheeses that bake well)
  • 2 teaspoons sweet smoked parpika, plus extra for sprinkling
  • country-style bread, tasted or grilled, to serve
Method
  1. Preheat your oven to 180C/gas 4. Cut off the top of the cheese with a knife and sprinkle with the paprika.
  2. Place the cheese on a baking tray, pop it in the oven and cook for 15 minutes, until the cheese is very soft and gooey. Transfer it onto a plate and sift over a little extra paprika.
  3. Serve the baked cheese immediately with the toasted or grilled bread on the side.

This tomato salsa is a great accompaniment to grilled fish and meat, and lovely served with fajitas or spooned into a falafel wrap ....

Ingredients
  • 6 ripe tomatoes
  • 1 large bunch of fresh coriander
  • 1 onion
  • 2 fresh jalapeno or green chillies
  • 1 large clove of garlic
  • 1-2 limes, juice from
  • extra virgin olive oil
  • sea salt
  • freshly ground black pepper

Method

Finely chop the tomatoes and coriander (stalks and all) and place into a large bowl. Peel and finely chop the onion, deseed and finely chop the chillies, then add it all to the bowl.

Peel and finely grate in the garlic. Add the juice from 1 lime and 2 tablespoons of extra virgin olive oil. Mix well, then season to taste with salt, pepper and lime juice. Serve straightaway or cover and set aside for a few hours to let all those flavors develop

These yummy cheese and ham scrolls are so easy to make you can get the kids to help. All you need is some puff pastry and your favorite fillings. Just roll them up, put them in the oven and hey presto ....

Things you will need
  • 1 cup of water
  • 3.5 cups of sugar
  • Food coloring
  • Jars
  • Lollipop sticks/skewers
  • Clothes pins
Tips for best results:

1. Make sure the sugar on the skewer is fully dry ....

If it's not, the sugar coating will fall off and the new crystals will have nothing to grow on. You can also end up with a glass full of sugar crystals and the skewers will get stuck to crystals that are growing on the bottom of the jar and you won't be able to remove the skewers without breaking anything.

To make sure the sugar is dry, you can prepare them a day before and use water instead of sugar liquid. Place the coated skewers over your heating on some paper and let it dry. Then rub off the excess sugar very carefully to make sure you remove everything that doesn't stick to the skewer.

2. You can boil the liquid again and add more sugar, if nothing is happening ....

You can add more sugar if you didn't have enough or add more water to avoid any left over crystals. If you use the above ratio you and the sugar still dissolves, you have to add more sugar into the water until nothing dissolves any more. You will see it when there are crystals that don't want to go away. What works is adding just a little bit of water so these crystals can crystallize as well. Then you know you have enough sugar in it.

3. Remove the hard pieces of sugar off the top and transfer the liquid into a new clean jar ....

If the crystals are growing on the skewers but the surface is full of crystals as well, you can remove the top and pour the liquid into a new clean jar and then place the skewers back into the jar.


Chef Sarah Ellsworth, the London Plane, Seattle, uses creamy bomba rice and orange-flower water to make an elevated rice pudding for her daughter-for breakfast: ''It's a weekend treat''....

Ingredients
  • 1 cup bomba or arborio rice
  • 1/4 teaspoon kosher salt
  • 5 cups whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon orange-flower water
  • 1 pear, sliced
  • 1/3 cup chopped unsalted, roasted pistachios
  • Hone (for serving)
Preperation
  1. Bring rice, salt, and 1.5 cups water to a boil in a medium saucepan. Reduce heat, partially cover, and simmer until water is almost completely absorbed, 6-8 minutes. Add milk, return to a simmer, and cook, stirring occasionally, until rice is tender and milk is thickened, 30-35 minutes. Add sugar and orange-flower water and cook, stirring, until sugar is dissolved, about 1 minute longer. Let cool slightly.
  2. Serve rice pudding topped with sliced pear and chopped pistachios and drizzled with honey.

  • Salt
  • 1 pound bow-tie pasta
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves, smashed
  • 1 pint cherry tomatoes
  • 3 ears fresh corn, kernels cut off
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh basil leaves, torn into pieces
Directions

Bring a large pot of salted water to a boil and cook the pasta until al dente; drain.

Meanwhile, in a large skillet, heat the olive oil over medium heat.

Add the garlic and tomatoes and cook, stirring occasionally, until the tomatoes are softened, about 5 minutes. 

Stir in the corn, raise the heat slightly and cook until the corn is heated through and golden, about 5 minutes. Season to taste with salt.

Add the vegetables, butter and basil to the pasta and toss.
